Do I need to make copies of the documents or not
Will the consulate need the copies or those are just for my records

Either call the consulate and ask or make copies for your heirs! =Peter=

I would keep copies just to have for myself but I believe the consulate wants and keeps all originals. At least thats what I was told for Philly.
