How many days can one stay in Italy before needing a visa?

You can stay in the schengen area for 90 days within a 6 month period. So. 90 days.

Assuming, of course, that you are a US citizen traveling from the US. Or, any combination of citizenship/current residence which has a Visa Waiver Program in place with the Schengen member countries.
