Since there are several ways to go your best bet is to buy the book Italian genealogical Recorfds by Trafford R. Cole which is an easy read and will allow you to fully explore your family back to 1809 easily. Bear in mind that all records in Italy are in the town of origin and save for a few other sources at the provincial level you must know the name of the town for all intent and purpoises of genealogy.
