Citizenship via marriage

I'm looking for any help from someone who might have gone through a similar situation. I have received confirmation of my own Italian citizenship and have my passport in hand. My wife would like to apply through me and we have obtained the necessary documents from Italy. When we asked for an appointment (San Fran) they told us that because we knew we would be moving within the 2-year waiting period that we should wait and apply in the new jurisdiction. This makes sense except that we are moving to Slovakia. We wanted to get our application submitted before having to deal with a new consulate in a language we don't speak and requiring additional background checks with translations from slovakian into Italian.

Any advice? How hard is it to obtain background checks in various countries?
