From Ellis Island to Vicksburg,Miss as indentured servants

Hi, In 1906 my great grandfather, his wife and his 6 small children sailed to Ellis Island from Castelnovo Bariano . From there they went down to Vicksburg ,Mississippi or Louisiana to work on a plantation. They escaped in the night after 4 months and went to Connecticut.
Does anyone know how I would get any records of them being in the south? I have the Ellis Island information.
