Cafarellis and Cafarellas

I sent an email request for Cafarelli family records to Accettura, Matera, Basilicata, last Thursday and received excerpts of the birth records by email today (Wednesday). Bravo for Accettura! They found that in two of the birth records the family name was written as Cafarella instead of Cafarelli.

Can anyone tell me if the ending of the name might vary for reasons other than transcription error? For example, it is wise to assume that name changes were such that any Cafarellas could be Cafarellis and vice versa? And what about double fs--Caffarella/Caffarelli?

I'm also wondering whether Cifarellis, for which I'm finding some records, might be Cafarellis, or if there's any linguistic rules or patterns that would eliminate this possibility.
