It looks like Nicola Vana, 47, and I think the profession is Cavamonte but wait for someone else to verify. I couldn't find this occupation in my dictionary nor my occupation lists but I have seen it somewhere else and it is to do with digging up rocks for use in building/construction. It appears once here on IG.

You are probably right about a Cavamonte working in caves as after I'd written my initial post I did another search and came across Cavamonte in reference to the caves at Matera. It was in Italian and I could only really get the gist but it seemed like what it was saying was that the Cavamonte did more than just dig, they also had to assess the situation first – maybe like an engineer would – not sure. It took ages to download the PDF and I was sure I had saved it but I'm not sure where to? (I have a new computer)
Just by looking at some pics I also wondered whether a Cavamonte might actually carve stones/rocks. Just a thought.
