Cappellaio is a hatter
Cappellano is a chaplain

it looks like cappellano to me but I doubt he was a chaplain as in the catholic religion he wouldn't be able to marry and I know for a fact Vincenzo bianchi was married.

below is also Vincenzo's marriage record which states his profession as well as his father's profession Francesco. I'm leaning toward Cappellaio even though again it looks like cappellano
