Hi - Call the Consulate, and tell them that you'd like to go and walk your mom through the appointment, since you did all the legwork. Ask to be noted on her appointment (just because you ask - does not mean they will, but ask kindly and they have the power to approve your participation).
I asked if I could sit in on both my mothers and brothers case coming up. I was given permission. However, I do expect possible issues on the day of their appointment. In short, call and ask for their permission - they will note it in the calendar for your mom's appointment.
