It really does look like Garesi. It's hard to see how it could be anything different. But Garesi doesn't really exist as a name in Italy now, and I haven't come across it in Sicily in the 19th c. either, whereas Garrasi (along with Guarrasi and Guarraci) is a name found in Palermo and other parts of Sicily.

I believe the mother's surname was Guaresi and that the u was omitted in the death record. Here is a death record for another child of the same couple and there is clearly a u in the surname. (#103 for Providenza Salerno)
