Raised in a Monastery
I was told that my GGF was raised in a monastery up until the age of 14, upon which time he returned to his family. I know that he was not a orphan and his family was rather well-off. Was this common practice in Italy around the 1870's.

I am guessing, but think of it as a "boarding school" situation.
All over Europe - even today - the children of people of means were often sent away to boarding schools as the only means to a decent (or, any) education.
What part of Italy did your ancestors come from? I would imagine there would have been huge differences in educational opportunities in the northern cities such as Roma-Genova-Firenze-Milano-Torino vs the southern farming areas.
