Here is the birth of a daughter Concetta in 1815 (30 August)

While Olimpia Baratta's father is not identified, her age is. She is age 30, so birth date would be about 1785.

In this record, Alessandro Pietromonaco is identified as age 40, putting his DOB about 1775...

EDIT TO ADD:
Another child in 1811 (16 December)... Gabriele
On this record Alessandro is age 34 :?

Father: Alessandro, 36, son of deceased Domenico
Mother: Olimpia Baratta, 32, his wife

***This gives you another generation back :-)

People tended to start losing track of their ages over time. The closer it is to their date of birth the more accurate it probably is.

I did some looking, but I have to stop now for class.
I suggest finding a marriage in 1809 or 1810 if possible, which would include Olimpia's parents names (maybe allegati with even more info) or her death act. I as of 1855 I found nothing, but if she died between 1856 and 1865 the record will be there and hopefully with information about her parents.
TIP: When asking for records from Italy, do NOT ask for an "estratto." ALWAYS ask for a "copia integrale." A photocopy of the original Act will contain more information

I have already checked the marriages for 1809 and 1810 (the earliest records available online) and have not found a marriage for this couple.

And her death was not found in years 1856-1860 of the Morti in Vinchiaturo.
I did find a death act of an Olimpia Baratta in 1837, but she was the widow of Antonio Pede, and she was age 46.

FYI - On the death act of Alessandro Pietromonaco in 1830 (17 October), Olimpia Baratta, his wife, is identified as age 60... putting her DOB about 1870. :) another (yet common) variation in age.

Olimpia Baratta, age 80, was the widow of Alesandro Pietromonaco (who died in 1830)
She was the daughter of (deceased) Antonio, and of (deceased) Carmela Iammatteo .

Her son-in-law, Carlo Petosa, age 55, was one of the persons to go to the town official to declare the death.

Funny you should ask! :D

I located the marriage of Carlantonio Petosa and Carmela Pietromonaco. This appears to be another daughter of Alessandro and Olimpia, born about 1808...

Solemn Promise of Marriage
#9
Dated 18 June 1833, at 11 AM before the official in Vinchiaturo
Appeared Carlantonio Petosa, 27, born in this town, a laborer residing here; son of Maestro Domenico [Petosa] a mason residing in this town; and of Maria Pede.
AND
Carmela Pietromonaco, 25, born in this town, residing here; daughter of deceased Alessandro [Pietromonaco] and of Olimpia Baratta, residing in same [town].

Banns were posted on 21 April of this year.

To the official were presented the following documents:
1 – the birth act of the groom
2 – the birth act of the bride
3 – the notification [banns] at noted above, and which has produced no opposition to the marriage.
4 – the death act of the father, and the grandfather of the bride
5 – the act of verbal consent of the father and mother of the groom, and the mother of the bride

These named documents would appear in the Marriage Allegati or Processetti if we can locate it.

You are speaking of Carlo Petosa and Carmela Pietramonaco, correct?

Would have to look through the Nati... (births) to find the surname, then check parents' names...

Will check some dates right after the marriage date and get back to you.

EDIT TO ADD:

Found a son born in 1833

Record dated 29 July 1833
Child born 28 July 1833 at midnight
Father: Carlo Petosa, son of Maestro Domenico. He was age 26, a laborer living in the town
Mother: Carmela Pietramonaco, age 25, his wife.
Child was given the name BERARDINO

Baptized same day in the parish church in Vinchiaturo.

Elisabetta would be her second name, or middle name. In Italian, I'm not sure about other cultures, second (or third etc.) names were given often, although not always, based on status. Ie. a wealthy family might have a child with 3 middle names. Also, in Italian culture, middle names were not "middle names" they were simply other names and a child could go by any of them.

So a person named "Anna Maria Vittoria Gambini" could go by Anna, Annamaria, Vittoria, Anna Vittoria, etc. And those names could therotically appear on any of her documents which is why sometimes it is good to find the baptismal records to get middle names. Sometimes people can't find death documents because a person commonly went by their middle name and that is what ended up on their death document.

For instance the grandmother of my grandmother went by her middle name, Elisabetta, in Italy and it wasn't until I got her birth document that I found that it was only her middle name. Similarly my grandfather is named Piergiorgio Gentili but I only ever knew him as Giorgio until I actually started asking questions.
