Based on my amateur translation, they were married 23 Dec 1869 and Vito was 25 years old. That would put his birth date between 23 Dec 1843 and 23 Dec 1844. I searched every birth act in that interval in Positano and did not find his record. Am I missing something here? Any suggestions? Any help?

It says that he hadn't yet completed 25 years, so try 1845.

Also, the original difficulty I had was apparently not translating correctly Vito's age on his marriage act. What I read as 25 years old, you correctly concluded that he hadn't yet completed 25 years. What is the phrase that I missed that led me astray? Is it normal to use that locution "not yet reached" rather than the exact age on commune records?

You are very welcome. You did read the age correctly, except that you missed the two words that followed "non compiti" which in the context of the civil record mean that he was in his 25th year but had not yet had his 25th birthday.
The mother, Clementina di Rosa, was 25 yo (di anni venticinque), living Strada Sopra il Fiume (translates to street above the river)
The father, Nicola Castellano, was 24 yo (di anni ventiquattro), a Marinaeo (seaman) living at the same address.
The date of birth is always given in the body of the record. The date at the beginning is the birth registration date.
On the right column are the baptism details. Likewise, the date is always given in the body of the record. He was baptised on 25 April 1845 in the Parish of S. Maria di Positano.
