Surname Villa or Villari

I have found what I think are the Italian birth and marriage documents for my great grandfather. The last name on the documents is Villa as is the last name on the ship manifests from Naples to Italy. However, All the documents that I find in America list him as Villari. Eventually, the family goes by the last name Willard. Does anyone have any explanations of how the name went from Villa to Villari? My family is from Baia e Latina .

Just by transfer of information either verbal or writing look at the US census records there are tons of spelling errors
My surname Adelfio was Adolfo, Aderfio, Addelfio and other spellings

I also have my gg grandfathers death certificate
