I am extremely interested and have exact information on names, cities, birth locations (and even have a few birth certificates) in Sicily for nearly ALL of my relatives.
It would be incredible to take it back a few centuries beyond that.

iI am bemused by the fact that anything prior to civil records which in Sicily normally began in1809 would, of necessity be in church records and a "professional Genealogist" cannot produce a record that you can't already produce yoursrelf since you like the "professional" have to coax a prelate to go thru his records dating back to the early 1700's. Of course, you can always go to Sicily or hire some who regularlay goes to sicily and ask them to find the records you are seeking. This all hinges upon their availability. Even military records only go back to the time when Italy was established as a nation in 1872 so aside from any books written about the history, folklore, and famous people in the town of origin you are researching which is available in antiquaruian bookstores in Italy the "professional cannot produce something that you cannot get yourself. This is why I am bemused when you say it would be incredible to obtain all these early names of relatives. These porfesssionals cannot pull names and dates of birth from the air!!!! Peter

One thing to add though...
For a person like me with no free time, but an intense desire to gain conscription records and vitals information from Italy, it's very hard.
This forum has been wonderful, but even with this and the military one (commandosupremo) I am on, I haven't yet found the address of the appropriate place for my Gradfather's records. (Leone Dragone- 21 APR 1889, Cairano, avellino. Into Cavalry? circa 1911-12. Caporale Maggiore) Although I have a letter ready. From the info I have, subsequent follow-up mailings might be required.
All this (for me) would be great to hand off to someone else to do. Of course I appreciate the warning not to get taken, but fear I will make little progress on my own.

I am at a loss to understand what your problemis since you appear to know where to go for themilitary record having a form letter already prepared, presumably in italian??? peter
