Missing Birth Record - Italian Ancestor's Wife

I am attempting to become an Italian citizen through my lineage "jure sanguinis." My great-grandfather immigrated to the United States where he met his wife. Unfortunately, I was unable to locate his wife's birth record but I was able to find her marriage and death record. What will the Italian consulate require for me to prove that no record of her birth exists? Unfortunately, according to the head of the Municipal Archives in NY, it was fairly common that home births in Brooklyn were never reported or recorded properly.

I'm in the exact same situation. I'm hoping this is very common and the Italian officials will be understanding about it. I couldn't even locate their marriage record.
