These are tax records with property information, not demographics.

The first one looks like land owned by Vincenzo Capriano(?), including some land used for families and some useless(?) land.

Maybe someone else will provide a better translation.

The first one looks like land owned by Vincenzo Cipriano from Reguttano, including some land cultivated with wheat (Classe frumentalia) and another unproductive (Inutile) piece of land, because it is a sheep track (trazzera)

Thank you all for your help. Yes you are right, Petralia Sottana held many "census' reports, where some dealt with ownership of land, animals, etc...I'll post a couple more later (from 1756) that dealt with people and monies. Some of these are really great. It is unfortunate that the Mormon church has pulled these census films from the records you can find online...now you must go to Salt Lake City to see these records or have friends there, or pay someone.
