What's the proper pronunciation of "me" in Italian language?

It's "me" as written.

That's similar to what Google Translate has. I was expecting "may".

In our family I have heard it as both "meh" and "may"...

My parents would say “meh” which in my English sounds very much like the “a” sound in “apple”.

Definitely not “may” which in my English sounds like the “a” in “make”.

Just my two cents.

The word "mai" (ie "never") sounds very similar to my English "may". I wonder if that was what you were hearing?
