They also are wondering if they can find the documentation that Vito would have been required to give when he was naturalized. Can they get that paperwork, and if yes, how?

You can request Naturalization records from NARA.
If you are looking for "documentation" such as birth acts, etc. That will not be included with the naturalization records held by NARA. Usually the packet includes: Declaration of Intent to Naturalize; Certificate of Arrival; Petition to Naturalize; and Naturalization Certificate.
