"Maestro" most often refers to a "master" or "teacher" of music or the arts. Not necessarily nobility, per se.

"La Camara" is not found, but "Camara" is peppered in some of the northern Italian provinces...

I wish I could help on the other questions, but certainly it would not be a stretch for a ...

Yes, Nicolao is referred to the same saint(s) as Nicola and Niccolò.
This one was the son of the deceased "Maestro" Antonino ("Maestro" is an artisan, like a mason, or a carpenter) and Ligutina (never heard this name before).
Notice that there's an abbreviation mark over an "a" in "Camara", so ...

From what I can find online, the surname appears to be specific to Palermo/Monreale. I do think you are on the right track concerning its origin, even though I see online that the etymology of the surname is obscure. The reason I say this is because Prof Fucilla, in his book on Italian surnames ...

In the first record, Pasquale was from Monreale. I believe it is the priest who was the confessor-the priest to whom he confessed his sins before dying-who was the person who lived in Bagheria? (Palermo). Pasquale may have been age 40, but I'm not sure about that.

Sapia is a surname, so my understanding from what I have read here on the forum is that "ats" means "alias" or "also known as" ie "also known as Sapia".
