Name Changes Between Borders/Emigration?

Should I trust my Northern Italian ancestors names or should I try more dramatic variations? I know from 1700-1850 the borders changed drastically...

For example:

Guerzoni = "of Guerzon" = Guerson (which is a French variant).

A stretch? Or a worthwhile research strategy?

In a birth record for my "step-great-granduncle" (my great grandfather's half-sibling), it states the mother as "Turci Maria Luigia di Francesco" (I'm blood related to her).

I'm wondering if I should keep in mind differences in names in records. Most of my family is from Northern Italy, which the borders changed quite a bit AND it is in close proximity to other nations.

Like if I have a "Francesco Turci" is it reasonable to look for a "Françoise Terzi"?
