I believe you have deciphered the profession correctly. You can find it spelled with an "sc" at the beginning, instead of just a "c," and it is a synonym for the word cardatore- wool carder. I think I have more info on this occupation, as it was an occupation in my husband's ancestry.

Here's some info on the occupation, sometimes spelled as cartolano
Cartolano or Wool Carder
The cartolano, or wool carder, was involved in the process of separating and preparing the wool fibers (or cotton) for spinning. In the days before the existence of machines, this kind of work was done by hand and, therefore, involved a great deal of skill and practice. The carder would take two carding combs, which had upright teeth, and load one with the wool fibers. Using a back and forth motion, he then would place one carder on top, and then "combed" the carder through the wool on the lower carding comb. When all the carding wool had been transferred from the bottom carder to the top one, the carding combs would be flipped over, and the process would be reversed. When the wool was light and airy, the fibers easily separated themselves and were free from tangles. The mass was then formed into a roll of fiber, which could then be used on a spinning wheel.

Donna
It's possible that the spelling in your document is dialectal. On page 133 of the following link, you will find the entry cardalana and then you will see the word scardassiere
