It's a handy show. We have made hand made pasta at home for many years and we periodically try a shape or type that we haven't done before. Often you can find one of the pasta grannies that makes a particular local type that gives good tips on how to make the shape better or do it faster. We're pretty good at a lot of these but I am amazed at how fast some of them can do these various shapes, perfectly and a lot of times without looking. We get it done, but these ladies are super efficient.
