Regional dishes, cooking styles

As a nation state, Italy has emerged only in 1871. Until then the country was politically divided into a large number of independant cities, provinces and islands. The currently available evidences point out to a dominant Etruscan, Greek and Roman cultural influence on today's Italians.

https://www.youtube.com/@pastagrannies

It's literally just a show that pops into kitchens all over Italy and talks to 90 year old women while they cheerily make hand-made pasta.

Worth checking out. It has 940,000 followers. (chef's kiss)

Thanks for sharing. I shall take a look.

In addition to lettuce etc., our garden salad had orange slices drizzled with olive oil plus olives and sliced carrot.

It's a handy show. We have made hand made pasta at home for many years and we periodically try a shape or type that we haven't done before. Often you can find one of the pasta grannies that makes a particular local type that gives good tips on how to make the shape better or do it faster. We're pretty good at a lot of these but I am amazed at how fast some of them can do these various shapes, perfectly and a lot of times without looking. We get it done, but these ladies are super efficient.
