Could a child born Jacoby Filippo Sanfilippo 2 years later in a death record be called just Filippo?

yes.. I found many Death records showing just one given name... normally, what he was called familiarly.... amicably, you have to read the informant who he was, usually he used to write only a given name when the informant was not strictly related, he knew him and called him by that given name.. sometimes even if the informant was the parent, he did not provide both the given names, but just the one they used to call him in the family...
