Interpretation of Church record

I'm not sure which forum to submit this question to, so we'll start here in genealogy.

This document was harvested from the allegati packet for the marriage of
[Giovanni DiFranco x Maria Anna Barreca] in 1830.

It seems to be the 1779 morti document for Maria Anna's father, I'm reading it as perhaps "Batosian", and my guess is that it might correspond to "Sebastiano" in Italian. Or maybe it's a version of Baldassare (Balthasar)? But both of these are just speculations, a quick search of name translations on the web has not been helpful. Any other ideas out there?

A more general related question is how people nowadays refer to the names of ancestors when the only document to be found uses the church/Latin version of the name. Pretending that my guesses are correct, I imagine that the everyday Castelbuonese of the 1770's would have known this guy as Sebastiano, and not referred to him as Batosian, that the latter only existed as the name of record for church documents. So how is that dealt with among us modern descendants, on our written documentation of the ancestors?
