Although I have seen these as requirements for some other consulates but not NY, I thought I would ask anyway because I'm getting paranoid the closer I get to my appointment.
Does NY require my divorce decree, marriage certificate, or the birth certificates of my spouse and children (under age 18) -certified long form/apostilled/translated naturally.

NY is beginning to require documents from the non-Italian line. They will want a copy of the divorce degree when you apply because you are remarried, and your marriage document probably indicates that this is a second marriage. You will need the bc of your spouse, and your minor children.
Your minor children will obtain citizenship with you. If you are the husband, your spouse, if you were married before 1987 (or 1983, I'm not certain) would also obtain citizenship with you. If you were married after the applicable date or if you are the wife, your spouse can apply through marriage after you have been married for more than three years (I'm guessing you already meet this requirement).
