I looking to get copies of my grandparents birth certificates - My great grandfather was born in Jonadi/Ionadi, Vibo Valentia, Calabria,Italy and my great grandmother was born in Naples, Campania, Italy. Wasn't sure who to contact to request these documents. Can any one assist?

As for your GGM... you would have to narrow down her exact birthplace as Naples is both a Province and a city. If they were married in Italy, there should be a record of the publication of the banns in IONADI where the groom was from. Most likely they were married in her hometown. The "Pubblicazione" should identify her place of birth/marriage.
So when you write to the Comune of Ionadi, request a search for a marriage or publication of marriage for your GGF. Sometimes we get lucky and the marriage is annotated on the birth record
