You're welcome, Donna. Normally you find the occupation spelled as tavolaro. In his book, Our Italian Surnames, Prof Fucilla states that the surname Tavollaro derives from carpentry and translates it as "table maker." However, I found a link related to centuries ago where the occupation was spelled as tavollaro, and it stated that the occupation involved the task of distributing, collecting, and preserving material. I think the more modern concept of table maker makes for a much better translation of the occupation. The older concept seems much too vague for my taste.

the term "Tavolari" was also used to indicate the "periti giudiziari" (land surveyors?): they measured sites or land to establish the value of rural or urban properties.
