"lavoriero di pasta", i.e., I'd say, he worked as a labourer at a pasta maker's

Can you explain what a "confectioner" is? If that is someone who makes sweets and cakes, I'm not inclined to think so, but all is possible, as I'd never heard that expression.

pasta - as in "dough"

“lavoriero di pasta” – or could it be “worker (kneader) of the dough” i.e. one who was skilled at kneading the dough.
