It's really very normal for details on records, especially census record, to be slightly off. Most of them recorded ages, not birth dates, so they could vary depending on the time of year. Additionally, the data was dependent on the knowledge of the informant, which could be off. Censuses are taken ...

Also, I'm confused about the q.m symbol - if this means "late" or "deceased", it's saying that Maria Paola's father Francesco is deceased in 1800 but I have Francesco Bertoldi's death record from 1817 so he was still alive in 1800.
